These are some of my (and Chelli's) favorite recipes.

Appetizers

Toffee Dip

(makes a great desssert too)

Two 8 oz. packages of cream cheese (softened)
1/4 cup white sugar
1/2 cup brown sugar
10 oz. package of Bitz of Brickle Almond Toffee Bits (Heath bar brand usually)

Cream the cheese and two sugars together in a medium bowl.
Fold bitz of brickle into the mixture
Chill. (the mixture - not you)

Serve with Red or Green Apples, graham crackers (sticks work best), or cinnamon grahams

Salads

Entrees

Meat Loaf

1-1/2 lbs. Ground Beef (lean, preferrably)
1 lb. Sausage (Jimmy Dean)
1 Slightly Beaten Egg
1/4 of a Medium Onion - Chopped
1/2 Cup Quaker Oats (not instant)
Small Can of Mushrooms - Drained and Chopped
Season Salt
8 oz. Can of Hunt's Tomato Sauce

Preheat oven to 375*F
Mix the first six ingredients with a fork.
Add 1/4 can of sauce, seasoning and pepper (to taste). Mix.
Form mixture into pan with hands.
Bake at 375* for 45 minutes. Drain and pour remaining sauce on top.
Place back in oven at 375*F for an additional 30-45 minutes or until center is done - Enjoy!
(Total bake time: 1-1/4 to 1-1/2 hours)

Side Dishes

Jello Salad

8 oz. Cream Cheese (can use light)
16 oz. Can of Pears*
4-1/2 oz. Cool Whip
0.3 oz. Package of Lime Jello (small package)*
*(can also use strawberry Jello and canned peaches or any other combination)

Drain pears into a container. Add water to the pear juice to make 1-1/4 cups of liquid.
Boil liquid and dissolve Jello per package instructions.
Blend, cream cheese, Cool Whip, and pears in a blender.
Add Jello "liquid" and continue to blend. Pour into a mold and refrigerate.
When completely congealed, remove from mold - Enjoy!

Desserts

Dump Cake

9x13 Glass Pan
20 oz. Can Crushed Pineapple
Can Cherry Pie Filling
Box Yellow Cake Mix
1 Cup Chopped Nuts (Pecans and/or Walnuts) (if desired)
1 Cup Melted Shortening

Preheat oven to 350*F
In the Glass Pan, spread around the pineapple,
dot the pie filling over the pineapple,
pour cake mix evenly over the mixture,
add nuts across the cake mix (if desired),
pour shortening over all of the above.

Gently pull knife throuh the mixture to slightly mix - DO NOT BLEND.

Bake at 350* for 60 minutes - Enjoy!
(Total bake time: 60 minutes)
